recipe for gluten free peanut butter cookie pie


Cooking Instructions

  1. In a bowl, mix 1 C. Justin's Classic Peanut Butter, 1 C. granulated sugar, and 1 egg until dough forms.
  2. Preheat oven to 350℉.
  3. Spray a 9 inch pie pan with nonstick cooking spray, and press cookie dough mixture into pie pan with a spatula to make crust.
  4. Bake the cookie crust until edges are golden, about 15 min or until done (cooking time can vary).
  5. Let crust cool completely. Storing it in the fridge for about an hour will help the cooling process.
  6. Fill crust with your choice of ice cream.
  7. Letting ice cream soften slightly before filling the crust is helpful.
  8. Place in freezer for at least 3 hours, until very firm.
  9. Before serving, microwave 1 T. of Justin's peanut butter and drizzle over the top of the ice cream, along with some chopped Justin's peanut butter cup candies if desired.
  10. Cut, serve and enjoy!
