Savory Cashew Butter Sauce:
1/4 cup Justin's Classic Cashew Butter
3 tablespoons water
2 teaspoons raw honey
2 teaspoons soy sauce
2 teaspoons toasted sesame oil
1 tablespoon fresh lime juice
1 teaspoon freshly grated ginger
Pinch crushed red pepper
Roasted Cauliflower Steaks:
To make the sauce, combine all ingredients in a food processor, and blend until smooth and creamy.
Preheat oven to 400ºF.
For the cauliflower steaks, cut the head cauliflower into 4 (1 1/2-inch-thick) slices. Place on a rimmed baking sheet lined with aluminum foil.
Add bone broth, sage, thyme, and garlic. Brush cauliflower with 1 tablespoon olive oil.
Bake until browned, about 20 minutes. Carefully flip; brush with 1 remaining olive oil. Bake 10 minutes more.
Place cauliflower on a platter; sprinkle with kosher salt and crushed red pepper, and drizzle with cashew butter sauce.
