1 cup cooked quinoa

2 small sweet potatoes 

1 red bell peppers

1/4 cup olive oil, separated

1/2 teaspoon paprika

1/4 teaspoon chipotle chili powder

Salt and pepper 

1 can (15 ounces) black beans drained and rinsed

To garnish: cilantro, fresh lime, sliced avocado, jalapeños (optional)

Cilantro Lime Cashew Sauce:

1/2 cup Justin's Classic Cashew Butter
1/2 cup unsweetened almond milk 
1/3 cup cilantro
Juice from 3 limes
1/4 tsp. salt 

Cooking Instructions

For the cashew sauce, place all ingredients in a blender or food processor, and blend until smooth.
