Maple Almond Carrot Banana Bread

INGREDIENTS

1 1/2 cups whole wheat pastry flour

1/2 cup quick oats

1 teaspoon baking soda

1 1/2 teaspoons cinnamon

1/4 teaspoon salt

2 medium ripe bananas, mashed (¾ cup mashed banana)

1/2 cup maple sugar (or brown sugar)

1 egg

1 teaspoon vanilla

1 tablespoon coconut oil, melted

2 tablespoons JUSTIN’S® Maple Almond Butter

1/3 cup almond milk

1/4 cup unsweetened applesauce

1 cup shredded carrots

1/3 cup chopped pecans

1/2 cup golden raisins

1/2 cup unsweetened shredded coconut

Optional: Simple Mills Vanilla Frosting, chopped pecans

DIRECTIONS

  1. Preheat oven to 350 degrees F. Grease a loaf pan and set aside.
  2. In a large bowl, whisk together the flour, oats, baking soda, cinnamon, and salt. In a separate bowl, mix together mashed bananas, sugar, egg, vanilla, coconut oil, almond butter, almond milk, and applesauce. Transfer wet ingredients to dry ingredients and mix until combined. Fold in carrots, pecans, raisins, and coconut.
  3. Pour batter into prepared loaf pan. Bake 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool on a wire rack 10 minutes before removing from pan to cool completely.
  5. For frosted bread, spread vanilla frosting evenly over the top of the cooled bread and sprinkle with chopped pecans. Slice and enjoy!
